Collection: Sujihiki

Sujihiki literally means muscle cutter. This is a Japanese profile based on western carver or slicer knives, which is designed also for cutting large meat into smaller portions. Several meat cutters use this knife for trimming fat and the tendon out of big primal cuts. This shape comes with a double bevel and is usually around 240 to 300mm; some makers have asymmetrical grind bias for right or left-handed.
