Collection: Yanagiba

Yanagiba is a long, narrow blade for slicing Sashimi or other boneless protein. Originally from the Kansai region and now popular throughout Japan and even around the world.  It’s designed to slice in one sweep motion and not sawing action to prevent tear on the meat fiber. Specifically designed to slice Sashimi, where one single slice is to preserve the flavor of the fish. It is single bevel with urasuki (hollow ground in the back), typically around 240mm to 300mm. It specialized grind for right or left-handed.
